Chickpea Brownies

These chickpea brownies are so addicting–I’ve made them for the past 3 weeks and just finished baking a batch 10 minutes ago. Being gluten-intolerant, it’s hard for me to buy desserts from food places, and I prefer not to buy packaged ones from the store. This is my go-to recipe whenever I want to satisfy my sweet tooth.

Make these a chocolate chip blondie by omitting the cacao powder, and be creative with mix-ins! You can add a banana, nuts, fruit, etc.

You can also substitute the almond butter for a different nut butter, like cashew, peanut, or a flavored almond butter! I used All American Almond Butter in this recipe.

Chickpea Brownies

Servings: 16

Ingredients:

  • 1 can garbanzo beans (drained)
  • 2 tbsp almond butter
  • 1/4 cup rolled oats
  • 1/2 cup maple syrup or agave
  • 4 tbsp coconut oil
  • 1/4 cup chocolate chips, or more
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 3 tbsp cacao powder (omit if you want a chocolate chip blondie)

Instructions:

  1. Blend garbanzo beans with all the ingredients except the chocolate chips.
  2. Pour the batter into a pan lined with parchment paper and mix in your chocolate chips.
  3. Bake at 350ºF for 30 minutes, or until the top is golden brown.
  4. Slice into squares.

Note: Omit the cacao powder if you want a chocolate chip blondie! It tastes like a cookie, but even better! You can be creative with mix-ins (nuts, bananas, etc.).
