Strawberry Chia Jam Yogurt Parfait
Looking for a healthy dessert to curb your late night cravings, or maybe even a sweet breakfast? Well, my strawberry chia jam yogurt parfait is the perfect summertime treat that is both healthy and delectable! For this parfait I layered strawberry chia jam with So Delicious unsweetened vanilla coconut yogurt and topped it off with CompletEats’ chocolate chia vegan cookie! Their cookies are gluten-free, plant-based, and packed with protein (about 7g). They’re naturally sweetened with dates making the cookie soft, yet chewy. You can even eat one of these cookies for breakfast!
I’m lactose-intolerant, so I can no longer enjoy my favorite greek yogurt. I tried multiple dairy-free yogurts, and my favorite is So Delicious unsweetened vanilla. Yogurt is healthy, but when you start adding flavors, the added sugars come in–I recommend opting for unsweetened yogurt and adding your own fruit to flavor it, or even some vanilla extract!
If you’ve never made your own jam before, don’t feel daunted–it’s actually quite easy. All you need are 4 ingredients: strawberries, lemon juice, maple syrup, chia seeds. I like to slice my strawberries with an egg slicer to get them very thin! After slicing the strawberries you cook them down in a sauce pan for about 10 minutes, stirring occasionally. Then, you add the rest of the ingredients and let it simmer for a few minutes or until it is reduced to the consistency of your liking! It’s hard to believe that there’s just 1 tbsp of maple syrup in this recipe–the rest of the sweetness comes from the strawberries and lemon juice! You can also use agave or honey instead of maple syrup.

Strawberry Chia Jam Yogurt Parfait

Ingredients:
- 2 cups of strawberries, sliced
- 1 tbsp lemon juice
- 1 tbsp maple syrup
- 2 tbsp chia seeds
- 1/2 cup yogurt
- 1/2 CompletEats cookie, cubed
Instructions:
- Slice strawberries thinly–I used an egg slicer.
- Add to a medium saucepan over medium-low heat and cook for 10 minutes.
- Add in lemon juice, maple syrup, and chia seeds.
- Simmer for a few minutes or until it is reduced to your liking.
- Remove from heat and transfer to a jar.
- Make the yogurt parfait by layering strawberry chia jam with coconut yogurt. Top it off with a CompletEats cookie!
- Store jam in the fridge in an air-tight container.
